Potato Croquettes

  • Combine the potatoes, pepper, celery salt, butter, and salt. Add the egg yolk and mix well. Rub through a sieve and add the parsley and a few drops of onion juice. Chill the mixture to make it easier to work with.
  • Shape into smooth balls, then into cylinders. Dip each in breadcrumbs, then in the beaten egg. Dip in crumbs again. Fry in deep, hot fat (375°F). Drain on paper towels.
