Potato Croquettes

DIRECTIONS
Combine the potatoes, pepper, celery salt, butter, and salt. Add the egg yolk and mix well. Rub through a sieve and add the parsley and a few drops of onion juice. Chill the mixture to make it easier to work with.
Shape into smooth balls, then into cylinders. Dip each in breadcrumbs, then in the beaten egg. Dip in crumbs again. Fry in deep, hot fat (375°F). Drain on paper towels.
