Beef Stew

DIRECTIONS
Cut beef in 2 inch squares. Coat with flour and brown the floured beef cubes in beef fat or oil and butter mixture.
Add the onion stuck with cloves, the leek, turnip, herbs, and water or stock to cover. Bring to a boil and reduce the heat. Cover and simmer 1-1/2 hours or until the meat begins to become tender.
Add the carrots, onions, celery, garlic, potatoes, and salt and pepper. Cook until the meat is thoroughly tender. Correct the seasoning. The potatoes should thicken the sauce and make it thoroughly smooth.
Arrange in a tureen and add the beans, peas, parsley, and chives.
