Almond Cookies

DIRECTIONS
Preheat oven to 375 degrees F.
Cream the shortening, cream in the sugar, and add the remaining ingredients except egg yolk, water and nuts. Or have all the ingredients at room temperature, place in a mixing bowl in the order given except the last three, and mix with the hands until well blended. If using all lard in the recipe, you will need 1 teaspoon of salt. The amount of sugar depends upon your taste.
Roll the dough out on a floured board and form into four or five rolls about 1 inch in diameter. Cut off in about 1-inch pieces, and roll these into small balls. Press down on an oiled cookie sheet.
Mix the egg yolk with the water or whiskey. Press an almond in the top of each cookie, and brush with the egg yolk mixture.
Bake in a preheated 375°F oven 8 to 12 minutes or until a delicate brown. Remove from the pans while warm, cool on a rack, and store in airtight containers. Makes about 4 dozen cookies.
