DIRECTIONS

  • Preheat oven to 375 degrees F.
  • Cream the shortening, cream in the sugar, and add the remaining ingredients except egg yolk, water and nuts. Or have all the ingredients at room temperature, place in a mixing bowl in the order given except the last three, and mix with the hands until well blended. If using all lard in the recipe, you will need 1 teaspoon of salt. The amount of sugar depends upon your taste.
  • Roll the dough out on a floured board and form into four or five rolls about 1 inch in diameter. Cut off in about 1-inch pieces, and roll these into small balls. Press down on an oiled cookie sheet.
  • Mix the egg yolk with the water or whiskey. Press an almond in the top of each cookie, and brush with the egg yolk mixture.
  • Bake in a preheated 375°F oven 8 to 12 minutes or until a delicate brown. Remove from the pans while warm, cool on a rack, and store in airtight containers. Makes about 4 dozen cookies.
