DIRECTIONS

  • Place the 3 tablespoons butter, mushrooms, and leeks in a large saucepan with a heavy bottom and sauté until the mushrooms and leeks are soft but not brown.
  • Combine the flour and melted butter to make a very moist paste. Add to the mushrooms and leeks. Cook until pasty, then stir in the chicken broth and the milk and warm through.
  • Add the vermouth and salt and pepper and serve.
