Zucchini Frittata

DIRECTIONS
Heat the olive oil in a large skillet over medium heat.
Add the onions and cook, stirring, until golden brown.
Add the zucchini and cook until lightly browned, about 10 minutes.
Season with salt and pepper.
Transfer the vegetables to a strainer to drain off the excess oil. Let cool completely.
Preheat the broiler.
Meanwhile, beat together until smooth the eggs, cheese, salt and pepper add the zucchini and onion mixture.
Heat in a large, ovenproof skillet over medium heat.
When hot, pour in the egg mixture. Reduce the heat and cook until the bottom is set, then place under the broiler for 30 to 60 seconds to finish cooking. A traditional frittata is not browned. Loosen the frittata with a spatula and slide it onto a plate.
