Zucchini Frittata

DIRECTIONS

  • Heat the olive oil in a large skillet over medium heat.
  • Add the onions and cook, stirring, until golden brown.
  • Add the zucchini and cook until lightly browned, about 10 minutes.
  • Season with salt and pepper.
  • Transfer the vegetables to a strainer to drain off the excess oil. Let cool completely.
  • Preheat the broiler.
  • Meanwhile, beat together until smooth the eggs, cheese, salt and pepper add the zucchini and onion mixture.
  • Heat in a large, ovenproof skillet over medium heat.
  • When hot, pour in the egg mixture. Reduce the heat and cook until the bottom is set, then place under the broiler for 30 to 60 seconds to finish cooking. A traditional frittata is not browned. Loosen the frittata with a spatula and slide it onto a plate.
