Sweet Potato and Apple Stuffing

DIRECTIONS
Peel the potatoes and cut into chunks. Place in a pot of water, enough to cover, and boil until tender.
Drain the water from the potatoes and allow to cool slightly. Mash the potatoes in a large bowl.
Melt the butter in a large skillet over medium-high heat. Add the onions and celery and cook until tender, about 5 minutes. Add salt and pepper.
Add the apples, apple cider, cinnamon, nutmeg and cloves and cook until the apples are tender but still firm, 3 to 4 minutes.
Stir into the chicken stock into the sweet potatoes and add to the apple mixture.
Use as a stuffing or turn into a large, shallow buttered baking dish. Dot with pieces of butter and top with breadcrumbs. Bake in a 350°F oven until browned and bubbly, 30 to 45 minutes.
