Warm Turkey Fillet Salad

  • Dip the turkey slices in seasoned flour and shake off excess. Dip each slice lightly in egg, then roll each in the fresh crumbs, pressing them in place lightly with your hands. Put them on a rack to dry in the fridge for 30 minutes. Heat the salad oil slowly until it will lightly brown a cube of bread in about 30 seconds; carefully lay the turkey fillets in the pan and fry them gently until light brown and crisp, turning them only once with two spatulas. About three minutes on each side should be sufficient. Drain them on crumpled towels in a warm place.
  • Toss the salad greens with the vinaigrette dressing, reserving about three tablespoons. Arrange the salad on four large plates. Quickly slice the turkey fillets into narrow strips and lift them undisturbed (looking like cutlets still) onto the top of the salad greens. Drizzle a bit of vinaigrette over the fillets and serve at once. The chilled salad greens and the warm, crisp, and tender turkey fillets are a delicious contrast.
