DIRECTIONS

  • Preheat oven to 400 degrees F.
  • Peel and core the apples (dropping them into acidulated water to prevent discoloration). Slice them about a quarter-inch thick.
  • Melt the butter in a skillet and when it is bubbling, add the apple slices. Sauté them gently until they are transparent and tender, turning carefully with a spatula from time to time. Sift the sugar and fold it in.
  • Transfer the apples to a small gratin dish. Mix the bread crumbs with the cinnamon and sprinkle them in an even thin layer over the top. Dot with butter.
  • Bake in the oven just long enough to brown the top lightly. Serve hot with or without cream or a plain custard sauce.
