Apple Crisp

DIRECTIONS
Preheat oven to 400 degrees F.
Peel and core the apples (dropping them into acidulated water to prevent discoloration). Slice them about a quarter-inch thick.
Melt the butter in a skillet and when it is bubbling, add the apple slices. Sauté them gently until they are transparent and tender, turning carefully with a spatula from time to time. Sift the sugar and fold it in.
Transfer the apples to a small gratin dish. Mix the bread crumbs with the cinnamon and sprinkle them in an even thin layer over the top. Dot with butter.
Bake in the oven just long enough to brown the top lightly. Serve hot with or without cream or a plain custard sauce.
