Avocado-Lime Chicken

DIRECTIONS
Flatten chicken breasts slightly (a rolling pin or a heavy jar will do it), and slice them lengthwise into 1/2-inch-wide strips. Season them well with the salt and peppers.
In a large skillet, bring the cream to a boil with the cumin and coriander, add the chicken, and barely simmer 1 to 2 minutes each side.
Remove the chicken slices to a warm plate. Boil the cream to thicken it, add the avocado cubes, and lime juice to taste. Pour the sauce over the chicken and sprinkle with the grated rind.
This super-quick dish is good cold or hot. It goes well served over rice and with a tomato vinaigrette salad.
Make chicken slices in a pâte-cream sauce. Purée in a blender 1/2 cup heavy cream, 1/4 cup chicken stock, 2 tablespoons foie gras pâté (or 2 chicken livers cut into pieces and sautéed lightly in butter), 1/2 teaspoon balsamic vinegar, and lemon juice to taste. Pour the sauce in a skillet and simmer as above. If you like, garnish the slices with cubes of foie gras.
