Walnut-Apricot Tart

Soak the apricots in brandy while making the crust.
Coarsely grind the walnuts in a processor and mix half of them with the flour, sugar, and butter. Press the mixture onto the bottom and sides of a 9-inch pie pan. Sprinkle with the remaining walnuts.
Take the apricot mixture and beat together the eggs, honey, and vanilla. Pour the mixture into the crust and bake at 350 F for 30 to 40 minutes, or until the eggs are set. Sprinkle with cinnamon and serve with whipped cream.
