Pork Tenderloin with an Ale and Cheddar Cheese Sauce

DIRECTIONS
Preheat the oven to 400 degrees F.
Season the pork with salt and pepper. Place a small amount of oil in a sauté pan and heat until it is hot but not smoking. Add the tenderloins and brown on all sides.
Transfer the tenderloins to a baking sheet and bake to the desired doneness (10 to 15 minutes), leaving the meat slightly pink. Remove the meat to a platter and keep warm.
Add the ale, shallot, garlic, cream, and beef broth to the sauté pan. Reduce over high heat until only 1 cup liquid remains. Lower the heat, whisk in the cheese, and blend until smooth.
Slice the tenderloins, place on individual plates, and spoon the sauce over the meat.
