Potato Pudding For Passover

INGREDIENTS

4 whole egg yolks, beaten
1/2 cup sugar
2 tbsp almonds, blanched and grated
¼ cup lemon juice
8 oz cold, boiled potatoes, riced
1/4 tsp salt
4 whole Egg whites, stiffly beaten

DIRECTIONS

Preheat oven to 350°F. Mix in order given. Place in well-greased baking dish and set the dish in a pan half filled with boiling water. Bake for 30 minutes.
