Brown Sauce

DIRECTIONS
In a heavy saucepan, heat the butter until bubbling and sauté the vegetables until the onions are translucent. Add the flour and cook for 2 minutes over low heat, stirring frequently with a wooden spoon or rubber spatula.
Heat the stock and gradually add it to the vegetable mixture, stirring constantly. (To make double-strength stock, reduce 12 cups of beef stock to 6 cups by boiling rapidly. Canned broth or consommé may be substituted for homemade stock.)
Add the tomato purée, bay leaf, and salt and pepper, and cook for 30 minutes. Adjust the flavor and consistency to taste. Strain.
