  • In a heavy saucepan, heat the butter until bubbling and sauté the vegetables until the onions are translucent. Add the flour and cook for 2 minutes over low heat, stirring frequently with a wooden spoon or rubber spatula.
  • Heat the stock and gradually add it to the vegetable mixture, stirring constantly. (To make double-strength stock, reduce 12 cups of beef stock to 6 cups by boiling rapidly. Canned broth or consommé may be substituted for homemade stock.)
  • Add the tomato purée, bay leaf, and salt and pepper, and cook for 30 minutes. Adjust the flavor and consistency to taste. Strain.
