Fruit Salad Molded With Cheese Balls

  • Soak 2-1/2 tablespoons gelatin, in 1/2 cup water.
  • Drain and reserve the juice from 3-1/2 cups canned peaches, apricots or pears.
  • Combine and boil: 2 cups of the juice, 1-1/2 cups sugar.
  • Dissolve the gelatin in it.
  • Add these ingredients to the remaining juice with: 3/4 cup lemon juice, 3 tablespoons lime juice, 1/4 teaspoon ginger.
  • Add water or other fruit juice to make up 4 cups of liquid in all. Chill the gelatin.
  • Soften 1 package cream or pimiento cheese: 3 oz. with a little Mayonnaise Roll it into balls. Roll the balls in chopped nutmeats.
  • When gelatin is about to set, incorporate the fruit with it; place the cheese balls evenly around the bottom of a ring mold and surround them with the fruit and gelatin mixture.
  • Chill well and invert onto watercress.
  • Serve with Mayonnaise.
