Pecan-Breaded Breast of Chicken

DIRECTIONS
Preheat the oven to 375 degrees F.
Season the chicken breasts with salt and pepper and dredge with flour, shaking to remove any excess. Set aside for 1 minute, or until the flour becomes sticky to the touch. Dredge in the chopped pecans.
Barely cover the bottom of a small sauté pan with an ovenproof handle with clarified butter. When it is hot and bubbling, add the chicken and sauté on each side until the pecans begin to brown.
Place the pan in the oven to allow the chicken to finish cooking, for 15 to 20 minutes.
Remove the cooked chicken from the pan and set aside, covering it to keep warm. Add the shallots, wine, and mustard to the pan and allow to cook briefly over medium heat. Add the cream and bring to a boil.
Swirl in the butter and add the lemon juice and more salt and pepper. Place the chicken breasts on individual plates and cover with the sauce.
