Whole Cranberry or Roselle Sauce

DIRECTIONS
Place the water and sugar in a saucepan and stir until the sugar is dissolved. Boil the syrup 5 minutes.
Pick over, wash and add the cranberries.
Simmer the berries in the syrup uncovered, very gently without stirring, until the berries are translucent, about 5 minutes. Skim off any foam. Add the grated orange rind.
Pour the berries into 1 large, or several individual molds which have been rinsed in cold water. Chill until firm. Unmold to serve.
