Caramel Apples

DIRECTIONS
Wash apples, remove stems, and stick skewers into stem ends of apples.
Cook sugar, syrup, cream, butter, and vanilla to firm-ball stage, 245°F. Do not stir. Remove from heat.
Dip apples into syrup; spoon syrup over apples to cover completely. Remove apples; hold skewer between palms of hands and spin for a moment to cool caramel.
If desired, roll in coarsely chopped nuts. Place apples upright on waxed paper.
