Baked Fillet of Salmon Stuffed with Scallops and Mandarin Oranges

DIRECTIONS

  • Preheat the oven to 400 degrees F. Butter a shallow baking dish.
  • Prepare the stuffing by mixing together the scallops, oranges, and herbs.
  • Slice a pocket into the side of each salmon fillet, divide the stuffing among the pockets, and place the salmon in the prepared baking dish.
  • Pour over the salmon the lemon juice, wine, and salt and pepper and bake for 15 minutes. Serve with a slice of Pineapple Butter.
