Grilled Salmon with Squaw Corn

DIRECTIONS

  • Prepare coals for grilling.
  • To make the Squaw Corn, melt the butter in a sauté pan. Add the red and green peppers and onion and cook until just tender, about 8 minutes. Stir in the corn, bacon, and thyme.
  • Add the cream and simmer over low heat until the cream has reduced by half and the mixture has thickened. Season with salt and pepper.
  • Oil the salmon fillets on both sides and season with salt and pepper. Grill the fish for 5 minutes per side, more or less, depending on the thickness of the fillets and the desired doneness.
  • Place a bed of Squaw Corn on each plate and top with a salmon fillet.
