Grilled Salmon with Squaw Corn

Prepare coals for grilling.
To make the Squaw Corn, melt the butter in a sauté pan. Add the red and green peppers and onion and cook until just tender, about 8 minutes. Stir in the corn, bacon, and thyme.
Add the cream and simmer over low heat until the cream has reduced by half and the mixture has thickened. Season with salt and pepper.
Oil the salmon fillets on both sides and season with salt and pepper. Grill the fish for 5 minutes per side, more or less, depending on the thickness of the fillets and the desired doneness.
Place a bed of Squaw Corn on each plate and top with a salmon fillet.
