DIRECTIONS
Preheat oven to 400°.
Sift together the flour, salt, sugar, cinnamon, nutmeg, and baking powder.
In a large bowl beat the two eggs together, add the melted butter, milk, and pumpkin/yams. Mix until smooth.
Combine the liquid and the dry ingredients with a few swift strokes, making sure not to overmix. Fold in nuts and orange zest. Fill well-greased muffin pans two-thirds full and bake 20 to 25 minutes.
