DIRECTIONS

  • Preheat oven to 350°.
  • Have all ingredients about 70°. Sift before measuring: 4 cups all-purpose flour
  • Mix 1/2 cup of the sifted flour with nuts and fruits:
  • 1 cup chopped nutmeats, preferably blanched, slivered almonds
  • 1/2 cup finely sliced citron, candied orange or lemon peel
  • 1 cup white raisins
  • 1/4 cup chopped candied pineapple
  • 1/4 cup chopped candied cherries
  • (1/2 cup finely shredded coconut)
  • Resift the remainder of the flour with: 1 teaspoon double-acting baking powder
  • 1/2 teaspoon salt
  • Cream until light: 3/4 cup butter
  • Then cream it with: 2 cups sugar
  • Beat in, one at a time: 5 eggs
  • Add: 1 teaspoon vanilla
  • and continue to beat until light. Stir the flour mixture into the egg mixture and continue beating until thoroughly mixed. Fold in the reserved floured nuts and fruits. Pour into 2 loaf pans. Bake about 1 hour.
