DIRECTIONS

  • Have all ingredients about 70° and preheat oven to 375°.
  • Sift 3/4 cup of sugar. Beat 4 egg yolks, and gradually add the sugar. Beat until creamy and add the vanilla.
  • Before measuring, sift the flour. Resift with the double-acting baking powder and salt. Gradually, add the flour to the egg mixture. Beat until smooth. Whip the egg whites until stiff, but not dry. Fold lightly into the cake mixture. If desired, add 1/2 finely chopped nuts.
  • For easy removal, bake in sheet pans, 10-1/2 x 15-1/2 x 1 inch. Grease the baking sheet, then line the bottom with a long strip of parchment paper or foil which extends over the ends of the pan. Grease the paper also and pour in the batter so it covers all corners. Bake in a 375 degree oven about 12 minutes. Loosen the edges as soon as the cake comes from the oven. Reverse the pan onto a clean towel that has been dusted with sifted confectioner's sugar.
  • Immediately peel off the paper or foil. Trim any crusty edges and roll before the cake cools. When cooled, unroll the cake, top with the chocolate sauce and roll again. Place on the serving plate with the loose edge down and serve with whipped cream.
