Basic Crepes

DIRECTIONS
Whip the eggs in a stainless steel bowl until thoroughly beaten.
Add the milk, flour, salt, and clarified butter and whip until smooth. Let the batter rest, covered, for 1 hour to release the air bubbles.
Lightly oil a well-seasoned crépe or small omelet pan and heat it over moderate heat. Pour about 1/8 cup of the batter into the pan and quickly tilt the pan to evenly coat the bottom (the batter should be thin and even, with no holes or gaps). Cook gently for 1 to 2 minutes, until lightly browned on the edges. Turn the crêpe over and cook for 1 more minute.
As they are cooked, stack the crépes on a platter and keep them warm in the oven. Or wrap the crêpes tightly in plastic wrap and refrigerate until the next day. When ready to use, warm the stacked crêpes slightly to facilitate separating.
