DIRECTIONS

  • Preheat the oven to 350°F. Butter a 9 x 5 inch loaf pan.
  • Beat together the eggs, oil, honey, and vanilla. Stir in zucchini and orange rind.
  • Sift together the flour, baking soda, baking powder, sea salt, and spices. Stir into liquid mixture and mix just until well blended. Fold in the nuts.
  • Pour into the prepared bread pan and bake in the preheated oven on the middle rack for 1 hour and 15 minutes, or until a tester comes out clean.
  • Cool for 10 minutes in the pans, then reverse on a rack and cool completely.
  • Wrap in plastic wrap and foil and let sit overnight so the flavors will develop. This makes a very nice tea or dessert bread.
