  • Preheat the oven to 425°F. Bake the potatoes in their skins until thoroughly tender, about 45 minutes. Remove from the oven and reduce heat to 350°F.
  • Scoop out the potato from the peel, discard the peels, and purée the potatoes in a food processor fitted with the steel blade, or through a food mill. Mix in the yogurt and 1 tbsp of butter. Set aside.
  • Heat the remaining butter in a heavy-bottomed casserole or frying pan and add the carrots. Sauté, stirring, for about 5 minutes, then stir in the apples and sauté another 5 minutes. Remove from the heat and add the honey, raisins, nuts, spices, and sea salt. Stir in the sweet potato purée and mix everything together well.
  • Transfer to an oiled or buttered baking dish or casserole, cover with foil or a lid, and bake in the preheated oven for 20 to 30 minutes. Serve hot.
