DIRECTIONS
Preheat the oven to 425°F. Bake the potatoes in their skins until thoroughly tender, about 45 minutes. Remove from the oven and reduce heat to 350°F.
Scoop out the potato from the peel, discard the peels, and purée the potatoes in a food processor fitted with the steel blade, or through a food mill. Mix in the yogurt and 1 tbsp of butter. Set aside.
Heat the remaining butter in a heavy-bottomed casserole or frying pan and add the carrots. Sauté, stirring, for about 5 minutes, then stir in the apples and sauté another 5 minutes. Remove from the heat and add the honey, raisins, nuts, spices, and sea salt. Stir in the sweet potato purée and mix everything together well.
Transfer to an oiled or buttered baking dish or casserole, cover with foil or a lid, and bake in the preheated oven for 20 to 30 minutes. Serve hot.
