Bean Burritos

DIRECTIONS
Preheat the oven to 325°F. Wrap the tortillas in foil and place in the oven while you prepare the beans.
Drain the beans, retaining about 1/2 cup of their liquid. Coarsely purée, using the pulse action, in a food processor or blender, along with the cumin and chili powder. Moisten with the bean broth.
Heat the oil in a large frying pan and add the beans. Sauté, stirring, about 10 minutes.
Remove the tortillas from the oven and spread the refried beans down the center. Top with the cheese and roll up. Heat in the oven for about 15 to 20 minutes, or until the cheese melts. Serve with the chopped tomatoes and lettuce on the side.
