Place the coriander, pepper, fish sauce, coconut milk, turmeric, sugar, citrus, and garlic in a food processor and puree to use as a marinade. Submerge the chicken in the marinade and refrigerate for 2 to 24 hours.
Grill the chicken until it is no longer pink in the middle.
