Anchovy, Tomato, And Basil Toasts

DIRECTIONS
Put the garlic, anchovy fillets, olives, 2 tablespoons of the olive oil, and the egg yolk in a food processor or blender and process to a thick paste. Add the 1 or 2 remaining tablespoons of olive oil to make the mixture spreadable but not runny. Spread each of the toast slices with about 1/2 tbsp of the mixture, covering to the edges. Top each with a half slice of tomato and sprinkle with Parmesan cheese. Place under a broiler for a minute or two, watching closely, to melt cheese. Sprinkle with dried or fresh basil and serve at once.
