Zucchini Soup With Dill

DIRECTIONS
Steam zucchini 10 minutes. Meanwhile sauté onion and garlic in oil until onion is tender.
Remove zucchini from heat and refresh under cold water. Set aside 12 rounds of zucchini and purée the rest, along with onion and garlic, in a food processor, through a food mill, or in a blender, using some of the vegetable stock to moisten.
Pour into a soup pot along with stock and stir together well. Reheat over medium heat and stir in dill and lemon juice. Season to taste with salt and freshly ground pepper.
Serve, garnishing each bowl with a dollop of yogurt or crème fraîche and three rounds of zucchini.
