DIRECTIONS

  • Steam zucchini 10 minutes. Meanwhile sauté onion and garlic in oil until onion is tender.
  • Remove zucchini from heat and refresh under cold water. Set aside 12 rounds of zucchini and purée the rest, along with onion and garlic, in a food processor, through a food mill, or in a blender, using some of the vegetable stock to moisten.
  • Pour into a soup pot along with stock and stir together well. Reheat over medium heat and stir in dill and lemon juice. Season to taste with salt and freshly ground pepper.
  • Serve, garnishing each bowl with a dollop of yogurt or crème fraîche and three rounds of zucchini.
