Artichokes Stewed With Tomatoes And Wine

  • Trim artichokes, cut into quarters, remove chokes, and drop into a bowl of acidulated water (use the lemon juice for this).
  • Heat oil in a large, heavy-bottomed, lidded casserole and sauté onion with garlic, carrot, and celery until onion becomes translucent.
  • Add tomatoes and bring to a simmer. Cook for 5 minutes and add wine, bay leaf, parsley, salt and pepper, and artichokes.
  • Bring back to a simmer, cover, reduce heat, and simmer 40 minutes, or until artichokes are tender.
  • Adjust seasonings and serve with the liquid spooned over artichokes.
