Mushroom Broth

DIRECTIONS
Put the mushrooms, onion, and cold water in a saucepan and simmer, partially covered, for about 1 hour.
Remove from heat and let stand for at least 4 hours, overnight if possible. Strain and reheat, adding salt to taste.
Mushroom broth can also be used as stock in vegetable soups or in place of water in making meat stocks. For a more intense flavor, cook 5 or 6 boletus mushrooms with the broth.
