  • Put the mushrooms, onion, and cold water in a saucepan and simmer, partially covered, for about 1 hour.
  • Remove from heat and let stand for at least 4 hours, overnight if possible. Strain and reheat, adding salt to taste.
  • Mushroom broth can also be used as stock in vegetable soups or in place of water in making meat stocks. For a more intense flavor, cook 5 or 6 boletus mushrooms with the broth.
  •  SAVE
