Beef Vegetable Soup

DIRECTIONS
1. Place the bones and water in a large soup pot of at least 6 quarts. Bring to a boil and skim off the foam as it rises to the top.
2. Add all the remaining ingredients except half the carrots and the noodles and bring to a boil again. Simmer, covered, for about 3 hours.
3. Cool to room temperature. Put the soup through a food mill into a bowl.
4. Refrigerate overnight, covered. Before rehearing, remove the fat that forms on the top and adjust the seasoning. Bring to a boil. Add the carrots and noodles and cook, about 10 minutes or until done.
