Zucchini and Chili Latkes

DIRECTIONS
Peel and grate the potatoes and place, with the chili, zucchini, potato, onion, eggs, matzah meal, and salt and pepper to taste in a bowl and mix thoroughly.
Heat about 1/2 inch of oil in a non-stick skillet over medium high heat.
Add the batter in 3 tbsp dollops, flattening each pancake with a spatula.
Cook about 3 minutes until the first side is brown, then flip the pancakes and cook until the second side is brown.
Transfer the pancakes to a cookie sheet and bake in a preheated 350-degree oven until they are cooked through and crisp, about 12 to 15 minutes.
