Pineapple Sherbet

Bring the sugar and water to a boil. Simmer, uncovered, for 5 minutes. Remove from the heat. Add the corn syrup and chill overnight.

Remove from the refrigerator and reserve 1/3 cup of the sugar syrup. Mix the rest with the pineapple juice. Mix well and freeze for several hours.

When almost frozen, remove from the freezer. Start beating the whites until frothy. Add the remaining syrup gradually as you beat, and continue beating until the whites are stiff like a meringue. Stir into the sherbet and freeze.
