Braised Turkey with Sausages

DIRECTIONS
Mise en Place:
Mince the garlic.
Brown the sausages and cut them into 1/2-inch (1-cm) slices.
3. If the mushrooms are small, leave them whole. Otherwise, cut them into halves or quarters.
Cooking/Finishing:
Brown the turkey in the butter.
Add the garlic and sauté a minute.
Add the white wine and reduce slightly. Add the demiglaze, tomato purée, and salt and pepper to taste. Cover and braise in a 325°F (165°C) oven.
After 15 minutes, add the sausages to the pan.
Brown the mushrooms in a little butter and add them to the pan so that they cook with the turkey for about the last 10 minutes of cooking time.
When the turkey is tender, remove the solids with a slotted spoon and keep them warm. Degrease the sauce and reduce over high heat to thicken to a sauce consistency. Adjust the seasonings.
Return the turkey, sausages, and mushrooms to the sauce. When plating, top each portion with a little chopped parsley.
