Braised Turkey with Sausages

  • Mise en Place:
  • Mince the garlic.
  • Brown the sausages and cut them into 1/2-inch (1-cm) slices.
  • 3. If the mushrooms are small, leave them whole. Otherwise, cut them into halves or quarters.
  • Cooking/Finishing:
  • Brown the turkey in the butter.
  • Add the garlic and sauté a minute.
  • Add the white wine and reduce slightly. Add the demiglaze, tomato purée, and salt and pepper to taste. Cover and braise in a 325°F (165°C) oven.
  • After 15 minutes, add the sausages to the pan.
  • Brown the mushrooms in a little butter and add them to the pan so that they cook with the turkey for about the last 10 minutes of cooking time.
  • When the turkey is tender, remove the solids with a slotted spoon and keep them warm. Degrease the sauce and reduce over high heat to thicken to a sauce consistency. Adjust the seasonings.
  • Return the turkey, sausages, and mushrooms to the sauce. When plating, top each portion with a little chopped parsley.
