Roast Pork Loin Yucatan-Style

  • Mise en Place:
  • Mix together the first set of ingredients (spices, garlic, salt, and juices) into a thin paste.
  • Trim excess fat from the pork loin.
  • Rub the spice mixture over the pork.
  • Wrap the meat in plastic film. Let it marinate overnight in the refrigerator.
  • Mix together the sauce ingredients. Cover and hold in the refrigerator. (If the sauce is being made within 1 hour before serving, it may be held at room temperature.)
  • Cooking and Presentation:
  • Roast the pork in an oven preheated to 325°F (160°C) until the internal temperature is about 160°F (70°C).
  • Remove the roast from the oven and let stand in a warm place for 15 minutes.
  • Slice the meat and plate it. Top each portion with about 1 oz (30 g) of the sauce or serve the sauce in a small cup on the side.
