Roast Pork Loin Yucatan-Style

Mise en Place:
Mix together the first set of ingredients (spices, garlic, salt, and juices) into a thin paste.
Trim excess fat from the pork loin.
Rub the spice mixture over the pork.
Wrap the meat in plastic film. Let it marinate overnight in the refrigerator.
Mix together the sauce ingredients. Cover and hold in the refrigerator. (If the sauce is being made within 1 hour before serving, it may be held at room temperature.)
Cooking and Presentation:
Roast the pork in an oven preheated to 325°F (160°C) until the internal temperature is about 160°F (70°C).
Remove the roast from the oven and let stand in a warm place for 15 minutes.
Slice the meat and plate it. Top each portion with about 1 oz (30 g) of the sauce or serve the sauce in a small cup on the side.
