Wild Mushroom and Barley Stew

  • Heat the oil in a medium saucepan, and add the mushrooms, leeks, and salt. Sauté until the mushrooms are soft and the leeks are translucent.
  • Add the flour and stir until the vegetables are coated. Cook over medium low heat for 2 minutes, stirring constantly. Slowly stir in the soy milk and stock. Cook for 2 minutes longer, or until thick and bubbly.
  • Add the seitan and barley to the soup stock, and simmer until the seitan is heated through (5 to 7 minutes), stirring frequently. Just before serving, stir in the rosemary and sprinkle the top with thin slices of mushrooms.
