Wild Mushroom and Barley Stew

DIRECTIONS
Heat the oil in a medium saucepan, and add the mushrooms, leeks, and salt. Sauté until the mushrooms are soft and the leeks are translucent.
Add the flour and stir until the vegetables are coated. Cook over medium low heat for 2 minutes, stirring constantly. Slowly stir in the soy milk and stock. Cook for 2 minutes longer, or until thick and bubbly.
Add the seitan and barley to the soup stock, and simmer until the seitan is heated through (5 to 7 minutes), stirring frequently. Just before serving, stir in the rosemary and sprinkle the top with thin slices of mushrooms.
