DIRECTIONS

  • To make ice cream:
  • Bring the milk to a boil with the cream, half the sugar, the vanilla beans, and salt, stirring occasionally. Beat the egg yolks with the whole eggs and the remaining sugar over hot water. Remove from the heat.
  • Remove the vanilla beans and whisk the boiling milk mixture into the egg mixture. Place over hot water again.
  • Using a wooden spoon, stir the mixture until it coats the back of the spoon.
  • Stir in the glucose syrup, remove from the heat, place over ice water, and stir until cold.
  • Pass the cream through a fine-mesh sieve to remove any egg white that has run.
  • Spoon the mixture into an ice cream maker and freeze. Remove the spatula and divide the ice cream into portions.
  • Chocolate ice cream: Stir in 4 oz melted couverture with the glucose syrup.
