DIRECTIONS

  • Preheat the oven to 350°F. Coat an 8-inch square cake pan with nonstick cooking spray, and set aside.
  • Place the flour, baking powder, and pumpkin pie spice in a medium-sized bowl. Stir to mix well and set aside.
  • Place the eggs and vanilla in a large bowl, and beat with an electric mixer at medium speed for 2 minutes, or until well-blended and light in color. Gradually add the brown sugar, and continue to beat until well mixed.
  • Add the flour mixture to the egg mixture, and stir with a wooden spoon or rubber spatula until the batter is smooth. Fold in the apples.
  • Pour the batter into the cake pan and smooth evenly. Bake for 25 to 30 minutes, or until the top springs back when lightly touched.
  • Allow the cake to cool to room temperature before cutting it into squares and serving.
