Apple Cake

DIRECTIONS
Preheat the oven to 350°F. Coat an 8-inch square cake pan with nonstick cooking spray, and set aside.
Place the flour, baking powder, and pumpkin pie spice in a medium-sized bowl. Stir to mix well and set aside.
Place the eggs and vanilla in a large bowl, and beat with an electric mixer at medium speed for 2 minutes, or until well-blended and light in color. Gradually add the brown sugar, and continue to beat until well mixed.
Add the flour mixture to the egg mixture, and stir with a wooden spoon or rubber spatula until the batter is smooth. Fold in the apples.
Pour the batter into the cake pan and smooth evenly. Bake for 25 to 30 minutes, or until the top springs back when lightly touched.
Allow the cake to cool to room temperature before cutting it into squares and serving.
