Baked Roast Pork Buns

DIRECTIONS
Preheat the oven to 375°. Mix 2-1/2 cups flour, 3/4 cup water, and 1/2 cup lard or solid shortening and knead for 3 minutes. This is the water-flour dough.
Then mix 2 cups all-purpose flour and 1/3 cup lard or solid shortening and knead for 3 minutes. Divide each dough mixture into 24 pieces. Roll or press each water-flour dough piece into a 3-inch circle. Press a piece of the flour shortening mixture on top of it.
To make the filling bring the water to boil in a wok or saucepan and add the other ingredients. When slightly thickened, remove from the heat and cool enough to handle.
Place the filling in the center of each combination dough circle and wrap. Pinch securely closed. Place the buns on a cookie sheet with the rounded side up. Brush with the slightly beaten egg yolk. Bake for 10 - 12 minutes, or until golden brown. Serve hot.
