Bread Salad

DIRECTIONS
In a large mixing bowl, combine the bread, tomatoes with juices, celery, cucumber, onion, parsley, slivered basil leaves, capers, oil, vinegar, stock, salt, and pepper. Toss to mix. Let the salad stand for 10 minutes to allow the liquid ingredients to moisten the bread. If the bread still seems dry, add a little more stock.
Correct the seasoning, adding salt or vinegar to taste. Garnish the salad with the basil sprigs and black olives. Serve at once.
