Brown Rice & Sugar Snap Peas

Fill a medium-size saucepan three-quarters full with cold water. Add rice. Cover and bring to a boil. As soon as the water boils, remove lid and let boil for 30 minutes. Rice should be cooked through but not soft. Boil for 5 more minutes if necessary. Drain.

Meanwhile, trim strings from sugar snap peas. Cut pea pods in half, if large. Place in a microwave-safe bowl and cook on high for 1 minute. Or bring a small pot of water to a boil and add peas. As soon as water returns to a boil, drain. Toss cooked peas and butter with cooked rice. Add salt and pepper to taste.
