Apple Curried Chicken

DIRECTIONS

  • Trim fat from chicken breasts and cut into 2-inch cubes. Melt butter in a nonstick skillet just large enough to hold chicken pieces. When butter is sizzling, brown chicken on all sides. Remove to a warm plate and cover with foil.
  • Lower the heat and add apples. Toss gently in the pan for several minutes, without breaking them up. Remove to the plate with browned chicken. Add shallots to the pan and sauté for 1 minute, or until they start to shrivel. Add curry powder, cinnamon and cardamom. Cook for several seconds to release the flavor from the spices. Add flour and cook, stirring, so that the spices do not burn, about 1/2 minute.
  • Slowly pour in chicken stock, stirring constantly. Let sauce simmer for 3 minutes. Return chicken, apples and any juices from meat to the pan. Add cream and salt and pepper to taste. Mix well. Let simmer very gently for 5 minutes, or until chicken is cooked through. Serve on rice.
