Black Bean & Rice Salad

DIRECTIONS

  • Place rice in a strainer and wash under cold water. Fill a large pot with 3 to 4 quarts cold water and add rice. Bring to a boil and cook gently for about 10 minutes. Test a few grains to see if they are cooked through but still firm. Strain into a colander and rinse with warm water. Place rice and beans in a bowl and add cilantro and onion. Season with salt and pepper. .
  • Whisk lemon juice and mustard together in a small bowl. Whisk in chicken stock. Blend in oil. Pour over salad and toss. Taste and add more salt and pepper if necessary
