Zucchini & Tomato Salad

DIRECTIONS
Wash and trim zucchini and cut into julienne strips about 1/4 inch thick and 2 inches long. Place zucchini in a pot of boiling salted water. As soon as water returns to boil, drain and refresh zucchini under cold water to stop cooking and set color. Toss zucchini and tomatoes in oil and sprinkle with oregano and parsley. If using dried oregano, chop it with fresh parsley. Add salt and pepper to taste and toss again.
