DIRECTIONS

  • Trim fat from chops. Heat oil in a large nonstick skillet and brown chops on both sides, about 2 minutes per side. Pour off any excess fat. Add whiskey and flambé. If cooking over gas, warm whiskey in the pan for a few seconds and then tip the pan and let the flame ignite the liquid. Immediately remove from the heat and let the flame burn down. If you cook with electric heat, ignite with a match. Add chicken stock. Cover the pan and lower the heat. Cook on low for 5 to 7 minutes, or until chops are cooked through. Remove the chops to a warm serving platter and cover with foil to keep warm.
  • Add ham, sugar and mustard to the pan and blend well together. Mix cornstarch and water together. Pour into sauce and cook, stirring, until it thickens. This will take about 1 minute. Add salt and pepper to taste. Pour some sauce over chops and serve the rest on the side.
