Lemon-Parsley Rice

DIRECTIONS
Place rice in a colander and rinse under cold water.
Heat butter in a small heavy-bottomed skillet and sauté rice for 1 minute.
Add chicken stock, grated lemon rind and lemon juice. Bring to a boil, reduce heat and cook, covered, for 15-20 minutes, or until liquid is absorbed and rice is cooked through.
If rice begins to stick to the pan before it is done, add a little more chicken stock. Add parsley and toss well. Add salt and pepper to taste.
