DIRECTIONS

  • In a food processor bowl or blender container place mangoes. Cover and process or blend till smooth. Add water to make 2 cups puree. Transfer mango puree to a medium saucepan and bring to boiling.
  • In a large mixing bowl stir together the gelatin and sugar. Pour mango mixture over gelatin mixture and stir till gelatin dissolves. Stir in lemon juice. Cover and freeze for 45 to 60 minutes or till mixture mounds when dropped from a spoon, stirring occasionally. Beat the chilled mango mixture with an electric mixer for 2 to 3 minutes, or till thick and light. Fold whipped topping into mango mixture.
  • In each of 6 dessert dishes or parfait glasses spoon or pipe mango mousse. Cover and chill till set. Garnish with mango or kiwi fruit slices, if desired.
