  • CRUST PREPARATION
  • Roll out the larger piece of the pie dough and use it to line a 10-inch pie pan. Trim the edge and refrigerate the pie shell while you prepare the filling.
  • FILLING PREPARATION
  • Preheat the oven to 400 degrees F.
  • Peel and core the apples and slice them into 1/4-inch slices. Put the apple slices into a large mixing bowl. Stir the apple butter and lemon juice into the apple slices.
  • In a separate mixing bowl, stir together the sugar, flour, cinnamon, cloves and chili powder. Sprinkle the dry ingredients over the apples and stir thoroughly with a wooden spoon.
  • ASSEMBLY AND BAKING
  • Spoon the fruit into the pie shell. Dot the top of the filling with the butter pieces.
  • Roll out the smaller piece of the dough and cover the pie with it. Trim and crimp the edge. Brush the top of the pie with the egg wash. Cut a few slits in the crust with a sharp knife to allow the steam to escape while the pie is baking.
  • Set the pie on a sheet pan and bake for 30 minutes. Reduce the oven temperature to 350 degrees and let the pie continue to bake until it has browned nicely and the fruit is bubbling out around the edges, 30 to 35 minutes.
  • Let cool on a rack at least 30 minutes before serving.
