Broiled Portabella Cheeseburgers

Broiled Portabella Cheeseburgers

DIRECTIONS

  • Preheat the oven broiler to 500°F.
  • Place the oregano, garlic powder, and black pepper in a small dish, and stir to mix well. Set aside.
  • Spray a shallow baking pan with cooking spray. Arrange the mushrooms, top side up, on the pan, and spray with cooking spray. Sprinkle each with the seasoning mixture and spray once more.
  • Place the mushrooms under the broiler, about 5 inches below the heat source. Broil without turning for 4 to 5 minutes, or just until the mushrooms are tender when pierced with a fork and the juices begin to run.
  • Transfer half of the mushroom caps to a plate and cover to keep warm. (Do not place them on the buns yet, or the buns may become soggy.) Top each remaining mushroom cap with 1/2 oz of the cheese and a piece of red pepper. Return to the broiler for about 1 minute, or just until the cheese melts.
  • Place a plain mushroom cap on the bottom half of each bun. Top the plain cap with a cheese-covered cap and, if desired, 3 basil leaves. Crown with a bun top and serve immediately.
